Whole Loaf Dough Portioner

For connection to automatic dough filling machines or dough extrusion machines.

The Whole Loaf Dough Portioner is designed for fully automatic, weight-accurate portioning of wholemeal and mixed-flour bread dough into individual and multi-compartment baking tins for the production of whole loaves.

It is used in combination with a dough extrusion system and an automatic baking tin conveyor equipped with a stopper.

For operation, the Whole Loaf Dough Portioner is connected to a TFA automatic dough filling machine or a SAM dough extrusion machine. The portioner is coupled to the dough extrusion system using quick-release fasteners.

The dosing chambers are filled and the dough portions are discharged by the continuous pressure applied by the dough extrusion system. During this process, the dough contained in one dosing chamber is pushed out and deposited directly into a baking tin, while the other chamber is simultaneously refilled.

The portioning and depositing process is carried out by a dual-chamber system, with portion weights determined volumetrically. The volume of the dosing chambers is infinitely adjustable to achieve the desired dough portion weight.

Our dough dividers allow small quantities of dough (500 g – 2.000 g) to be portioned with high weight accuracy. The dosing unit can be easily attached to the extrusion unit of the horizontal mixer in just a few simple steps.

If required, the portioned dough pieces can also be deposited directly into baking tins.

This dosing unit eliminates the time-consuming process of manually weighing dough portions. For smaller bakeries, it significantly reduces manual workload and provides considerable time savings in production.
